Abstract:
PURPOSE: To obtain a cocoa powder mix for a drink which has excellent mixing property, fluidity and appearance and is suitable for milk and the like by mixing components of a drink cocoa source material containing maltodextrin in a batch, treating the mixture under specified conditions and then drying. CONSTITUTION: Components of a drink cocoa source material containing maltodextrin are mixed in a batch, then the mixture is pulverized, humidified with 10 to 25 wt.% water, and aggregated in an aggregating device. The obtd. aggregated mix is left to stand for 120 sec and dried to obtain a cocoa powder mix containing no sugar and 1 to 5% final water content.
