PURPOSE: To obtain an edible wrapping material which can be swallowed without chewing, by adding a starchy raw material to a mixture of protein, oil and fatand water, to an extent that the expanded product prepared by heating the mixture in an oil is collapsible easily with heat.
CONSTITUTION: (A) A protein of e.g. soybean, wheat, etc. is mixed with (B) preferably 5W50wt% oil or fat such as palm oil, hydrogenated oil, etc. based on the solid content of the component A, (C) a starchy raw material such as corn starch, wheat starch, etc., and (D) preferably 200wt% water based on the solid content of the component A. The amount of the component C is preferably ≥12% based on the dry weight of the component A when there is no addition of sucrose, or 12wt% when ≤5% sucrose based on the solid content of the component A is added to the mixture. A well-hydrated kneaded pastry is formed to a square sheet or circular sheet, etc. having a thickness of 3 W ten odd mm, and heated in an oil preferably at 90W180°C. The objective wrapping material obtained by this process is collapsible easily within 5min by heating in hot water at 95°C.
