PURPOSE: To enable continuous production of an emulsifier having excellent performance in high efficiency by reacting a phospholipid with a hydroxyl- containing compound in the presence of a phospholipase D having phosphatidyl group transfer activity.
CONSTITUTION: A phospholipid of formula I is made to react with a hydroxyl- containing compound of formula II in the presence of a phospholipase D having phosphatidyl group transfer activity and the objective phospholipid derivative of formula III is separated from the reaction mixture. In the formula, R1 and R2 are acyl and X is a residue produced by removing one hydroxyl group from a hydroxyl-containing base. The compound of formula HOR3 is e.g. ethylene glycol, diethylene glycol, triethylene glycol and glucose. Although the above reaction is an equilibrium reaction, the product is an acidic phospholipid derivative and, accordingly, it can be easily taken out of the reaction system by treating the organic solvent layer with an anion exchange material.
