Abstract:

PURPOSE: To obtain a beverage such as wine, beer, etc., hardly causing haze formation, having excellent qualities and functionality, by quenching an aqueous fermented liquid to the temperature of a freezing point to form an ice crystal in a nascent state, treating the liquid under specific conditions and efficiently cooling the fermented liquid beverage.

CONSTITUTION: An aqueous fermented liquid such as fermented wine beverage or the like is quenched, for example, by using a cooling system 26 to the temperature of about its freezing point to form only ice crystal in a nascent state in its minimum amount. The prepared cooled aqueous liquid solution is mixed, for example, with a fixed amount of ice crystal dispersed as a slurry at a stage after cooling in an ice-containing treating zone 23 in a short time without observable increase in the whole ice crystal volume in the prepared mixture. The liquid thus treated is extracted from the mixture and the process is performed without substantial reduction in the total water amount contained in the fermented liquid to cool the fermented liquid beverage.
