Abstract:

PURPOSE: To obtain a flavor oil which can give natural smell and flavor, as if it is cooked in the frying pan, to food products poor in flavor, when they are fried, such as instant Chinese fried noodle or spaghetti which are poor in flavor, when fried.

CONSTITUTION: In the preparation of flavor oil by heating oil together with wheat flour, the process of the invention comprises the following steps: (1) the preparation of a mixture of wheat flour, table salt and water, (2) the extraction of the mixture with oil at 180 to 240°C, and (3) the separation into the oil and the extraction residue.
