Abstract:
PURPOSE: To provide a method for producing a flavorous seasoning improved in flavor and capable of preventing deterioration.
CONSTITUTION: Dried fish as a raw material is ground and an extract of dried fish is added to the ground material. The resultant mixture is kneaded and the kneaded material is granulated. The granulated material is dried, thus producing the objective flavorous seasoning. The flavor of the flavorous seasoning can be improved by the flavorous components contained in the extract of dried fish. Oxidation of the flavorous seasoning and deterioration can be prevented by the anti-oxidant action of the extract of dried fish. Preferable fragrance can be kept over a long period and there is no problem about safety.
