Abstract:

PURPOSE: To impart powerful antiseptic effect to a food, e.g. soybean milk or boiled fish paste, by antimicrobial action of protamine and obtain the food having improved preservation quality, by incorporating the protamine and sorbic acid or benzoic acid (salt) therein.

CONSTITUTION: (A) Protamine and (B) sorbic acid or benzoic acid or a salt thereof are incorporated in a food, e.g. a food of a system containing protein present in a relatively low concentration. The amounts thereof to be added are preferably 0.01W5% protamine and 0.01W50pts.wt., based on 1pts.wt. protamine, expressed in terms of free acid, sorbic acid or benzoic acid respectively.
