PURPOSE: To obtain frozen buckwheat noodle by subdividing boiled buckwheat noodles into plural sets, removing water on the surface by centrifugal dehydration treatment and freezing, capable of distributing boiled buckwheat noodle prepared by boiling raw buckwheat noodle at one place such as a main shop to each branch shop and providing boiled buckwheat noodle excellent in flavor.
CONSTITUTION: Boiled buckwheat noodles are subdivided into plural sets and retained in a subdivided state. The respective subdivided boiled buckwheat noodles are subjected to centrifugal dehydration treatment to remove water drops on the surface of the noodles and frozen in a subdivided state to give the objective frozen buckwheat noodles. The thawing of the frozen buckwheat noodles is preferably carried out by sprinkling the frozen buckwheat noodles with hot water, rapidly thawing and immediately quenched in cold water.
