To provide food for microwave oven heating which can be quickly frozen so as to keep its flavor and quality by directly injecting brine.
The brine is directly injected into food such as porous moist wheat flour food preferably by 5 to 20wt.% per food. Besides, when the brine is usable as food additive, there is no special limitation, ethanol, propylene glycol, calcium chloride, sodium chloride and glycerol or the like can be singly used or suitably mixed and used as they are or as an aqueous solution and especially, the ethanol solution of <60% is preferable. Further, the porous moist wheat flour food generally indicates food having moisture content of ≥10%, more concretely, bread such as a loaf of bread, a roll, rolled bread, croissan and a bun filled with bean paste.
