Abstract:

PURPOSE: To provide the beverage excellent in flavor and good in fanciness, causing little browning and oxidation thereof, with stable quality causing no phase separation for a long period of time.

CONSTITUTION: A yogurt stock liquor fermented at a low degree of acidity is incorporated with desired fruit juice followed by homogenization at a high temperatures and pressures, and elimination of dissolved oxygen from the system is performed, and a sealed container is packed and heated, thus obtaining the fruit juice-contg. yogurt beverage.
