Abstract:
PURPOSE: To produce the title gelatin having improved water solubility, by coating the surfaces of gelatin particles with water-soluble gelatin.
CONSTITUTION: The surfaces of gelatin particles of a viscosity ≤20mP, obtained by hydrolyzing gelatin or a material therefor with an acid, an alkali, a proteolytic enzyme or the like, are sprayed and coated with a water-soluble gelatin solution of a viscosity ≤12mP to obtain gelatin of improved water solubility and a water content ≥6.3%.
