PURPOSE: To obtain a fatty material enhanced in the concentrations of fatty substances originated from linoleic acid or α-linoleic acid by hydrolyzing a specific form of γ-linoleic acid or stearidonic acid with a lipase and subsequently separating the residue.
CONSTITUTION: This method for producing the glyceride mixture comprises (a) hydrolyzing a mixture containing γ-linoleic acid and/or stearidonic acid in forms esterified at the 1.2 or 3-positions, preferably the 2-positions, of several glycerides among glycerides in natural states or a fatty material containing the mixture with a lipase, and subsequently (b) separating the produced free fatty acids to recover the residues not hydrolyzed by the enzymatic reaction. The lipase has a characteristic not or difficultly hydrolyzing the ester bond of the γ-linoleic acid or stearidonic acid esterified at the 1, 2 or 3-positions of the glycerides.
