Abstract:

PURPOSE: To obtain a hard candy having reduced hygroscopicity and stickiness and excellent in plainness and transparency by heating a sugar alcohol mixture contg. a prescribed amt. of maltitol.
CONSTITUTION: A sugar alcohol mixture contg. 77-86wt.%, preferably 82-84wt.% maltitol on dry basis is heated preferably to 150-150°C to obtain the objective hard candy.
