Abstract:

PROBLEM TO BE SOLVED: To control the content ratio of a highly unsaturated fatty acid, e.g. docosapentaenoic acid(DPA) and eicosapentaenoic acid(EPA) in a produced docosahexaenoic acid(DHA)-containing oil and fat in culturing a microorganism having the productivity of the DHA and DPA.
SOLUTION: A microorganism having the productivity for DHA and DPA is cultured in the presence of p-toluic acid, tannic acid or cyanocobalamine to thereby control the content ratio of the DPA and EPA in a DHA-containing oil and fat produced by the microorganism. As a result, a cultured microbial cell or fat and oil different in content ratio of the DHA, DPA and EPA can be obtained to facilitate the separation and refining of the DHA from the oil and fat.
