Abstract:

PROBLEM TO BE SOLVED: To provide a method for producing an ingredient-containing longish cooked rice by which the dispersion of weight of the cooked rice reshaped into a flat platy form is suppressed and the density of the ingredient is uniformized in the production of the ingredient-containing longish cooked rice by arranging the ingredient processed into the longish shape in the nearly center of the cooked rice formed into a circular flat platy shape when viewed in a plane and rolling the ingredient in the cooked rice.
SOLUTION: Cooked rice 2 is temporarily molded by pressing of temporary molding boxes 21 to thereby push out air among rice grains of the cooked rice 2 and raise the density of the cooked rice 2. The cooked rice 2 is then press molded with regular molding boxes 25 into a nearly elliptic cylindrical shape and divided. The resultant cooked rice 3 molded into the nearly elliptical cylindrical shape is rolled with a rolling roller to produce a flat platy cooked rice 4 of the nearly circular shape when viewed in a plane. As a result, the ingredient-containing longish cooked rice 1 is produced.
