Abstract:

PURPOSE: To industrially advantageously obtain the titled compound useful as seasoning, etc., by cultivating a variant belonging to the genus Brevibacterium, capable of producing L-glutamic acid, growing in a medium containing arparagine (aspartic acid as only one carbon source and nitrogen source.

CONSTITUTION: A variant [e.g., Brevibacterium lactofermentum AJ 12244 (FERM-P 8361), etc.,] belonging to the genus Brevibacterium or Corynebacterium, well growing in a medium containing aspartic acid or asparagine as only one carbon source and nitrogen source, capable of producing glutamic acid, is cultivated in a liquid medium, L-glutamic acid is formed and accumulated on the culture solution and it is collected, to give the aimed compound.
