Abstract:
PURPOSE:To obtain the title condensate from the whey as a byproduct in producing cheese from milk, by concentrating a liquid produced by ultrafiltration of whey followed by pH adjustment of said liquid to a specified value. CONSTITUTION:A filtrate produced by ultrafiltration of whey is concentrated to such a point as to reach 50% in the concentration of the lactose contained, and the resultant concentrate is allowed to stand to effect separation of the lactose. This lactose is then eliminated, and the pH of the resultant liquid is adjusted to <=7, thus obtaining the objective concentrate. Said whey is pref. sweet whey as a byproduct in cheese production.
