PURPOSE: To efficiently obtain a liquid oil having excellent storage properties at low temperature, by subjecting a blend oil of (semi)solid oil or fats with a liquid animal or vegetable oil to ester exchange and fractionating the treated oil with an emulsion system in the presence of a wetting agent.
CONSTITUTION: A blend oil of (A) 50W100wt.% oil or fat which is (semi)solid at ordinary temperature [preferably palm oil] with (B) 50W0wt.% liquid animal or vegetable oil [preferable example; soybean oil, rape (seed) oil, safflower oil, corn oil, etc.] is subjected to ester exchange. Then the ester-exchanged oil is crystallized in the presence of a wetting agent in water/oil type emulsion system and the deposited crystal is moved into water phase which is a disperse phase and suspended and the crystal is aggregated and aged in the water phase and then liquid oil is separated from water phase suspending the crystal part to provide the aimed liquid oil.
