Abstract:
PROBLEM TO BE SOLVED: To provide a method for producing a maltotriose, capable of producing a high-purity (≥45%) maltotriose solution using a small amount of maltotriohydrolase.
SOLUTION: This method for producing a high-purity maltotriose comprises the following two processes: (1) a starch solution is subjected to maltotriohydrolase as splitting enzyme to prepare a saccharified solution containing ≥25 %/ds of maltotriose, and (2) the above saccharified solution is subjected to ion exchange chromatography and thereby divided into a high- purity maltotriose solution fraction and non-aging dextrin solution fraction.
