Abstract:
To provide the production method for a bacterial cell-containing jelly drink which exhibits excellent mechanical filling functionality while preventing precipitation of bacterial cells.
The bacterial cell-containing jelly drink production method comprises the process of filling a bacterial cell-suspended solution having a gel point of 19-24C, or having a viscosity of 8-708 mPa at 23C into a package at a temperature of the gel point or more and 33C or less.
