Abstract:
PROBLEM TO BE SOLVED: To provide a production method of fruit cake capable of preventing pieces of fruit from going down in the cake and being dispersed in an uneven state, preventing moisture of pieces of fruit from seeping into the cake, preventing pieces of dry fruit from absorbing moisture of the cake dough and resulting in deterioration of a texture of the cake, and capable of easily producing the fruit cake comprising coordination of the texture of the cake and sweetness of pieces of fruit and freshness of the pieces of fruit.SOLUTION: There is provided a production method of the fruit cake for baking a mixture of cream containing starch and pieces of fruit and/or cut fruit having a minor axis of 5-30 mm and a major axis of 10-100 mm in plan view, in a state of contacting the cake dough. The state in which the mixture contacts the cake dough is one state or two states or more states selected from a state in which the mixture is adhered to a surface of the cake dough, a state in which the mixture is sandwiched by the cake dough, and a state in which the mixture is wrapped by the cake dough, preferably.SELECTED DRAWING: None
