Abstract:
To provide a method of producing a composition having a function of activating a natural immunocompetent cell using fermented coffee raw beans as a raw material.SOLUTION: A production method of a natural immunocompetent cell activating composition comprises: a fermentation step of blending coffee raw beans to a lactic acid bacteria suspension to perform lactic acid bacterial fermentation; a roasting step of roasting the coffee raw beans after the fermentation step; an extraction step of preparing a coffee extracted liquid that contains soluble solid of the roasted coffee beans obtained in the roasting step; an ethanol precipitation step of subjecting the coffee extracted liquid obtained in the extraction step to ethanol precipitation treatment and collecting an ethanol precipitation fraction; and a composition production step of producing a composition for activating a natural immunocompetent cell including as an active principle the ethanol precipitation fraction obtained in the ethanol precipitation step.SELECTED DRAWING: None
