Abstract:
PROBLEM TO BE SOLVED: To provide a production method of rice gel capable of obtaining rice gel by a simple process, and excellent in maintainability of a raw material before being changed into the rice gel; and to provide a production method of gluten-free rice power bread.SOLUTION: In a production method of rice gel, rice powder is subjected to heat treatment under a reduction atmosphere and then to maceration, to thereby obtain a gel state, or otherwise, rice is subjected to heat treatment under a reduction atmosphere and changed into a powdery state, and then subjected to maceration, to thereby obtain a gel state. In a production method of a raw material for rice gel, the reduction atmosphere is obtained by supplying super heated steam into a heater for performing the heat treatment. A production method of rice powder bread has steps of: mixing rice gel with other grain flour and yeast, followed by fermentation; and baking the mixture.SELECTED DRAWING: Figure 1
