PURPOSE: To efficiently produce the subject deodorized and decolored concentrate at a low cost by passing a whey through an ion exchange membrane electrodialyzer, treating the permeated mineral-containing permeation concentrate with active carbon and, as necessary, further concentrating the treated concentrate, etc.
CONSTITUTION: A whey formed as a by-product in producing cheese or casein is passed through an ion exchange membrane electrodialyzer and desalted. In the process, a mineral-containing permeation concentrate permeating through the ion exchange membrane is further concentrated in a concentrator so as to provide ≤50% solid content. For example, powdery or granular active carbon is added thereto and the resultant mixture is stirred. The active carbon is then filtered off to afford the objective concentrate, which, as necessary, can be further concentrated, dried and powdered.
