PURPOSE: To obtain a mucin having solubility and bacterial adherence inhibitory activity, useful for foods, cosmetics, medicines, etc., by demulsifying a waste liquor resulted from washing or boiling pig internal organs to eliminate the fat contained, concentrating the water-soluble fraction followed by protease treatment to recover the decomposed product.
CONSTITUTION: A waste liquor resulted from washing or boiling mucin-contg. pig internal organs (e.g. stomach) is incorporated with 0.5-5wt.% of a demulsifier (e.g. potassium chloride) followed by treatment at 50-60°C under a pressure of 150kg/cm2 to effect demulsifying the liquor, and the resultant liquor is continuously centrifuged by using a continuous ultra centrifuge and separated into an aqueous solution layer and a fat layer. The aqueous solution layer is then recovered and the resultant mucin-contg. water-soluble fraction is subjected to membrane treatment using a precision filtration membrane 0.1-0.3μm in average pore size to be concentrated. Next, the concentrated fraction is subjected to protease treatment (e.g. with trypsin) to oligomerize the mucin, and the water-soluble fraction containing the mucin thus oligomerized is concentrated through an ultrafiltration membrane 100-300kDa in fractionating molecular weight, thus obtaining the objective mucin.
