Abstract:

PROBLEM TO BE SOLVED: To provide a process for producing N-acetyl-D-glucosamine safe to human body in high production efficiency using an enzyme acting on an amorphous chitin as a substrate.
SOLUTION: A non-deacetylated amorphous chitin 2 or a uniformly and partially deacetylated amorphous chitin having a deacetylation ratio of 1-20% is used as a substrate and hydrolyzed to low molecular compounds by using mixed enzyme 3 composed of a lysozyme derived from albumen and a crude enzyme produced by an incomplete microbial belonging to the genus Trichoderma and N-acetyl-D-glucosamine 1 is isolated from the low molecular compounds with the crude enzyme.
