PURPOSE: To obtain the subject compound having an angiotensin transferase- inhibiting action by separating and collecting the nicotianamine from the extraction solution of soybean with a synthetic adsorption resin.
CONSTITUTION: Soybean capable of being stably supplied as a raw material as such is extracted with water or 45-130°C hot water without crushing the soybean. Nicotianamine in the extraction solution is separated and collected with a synthetic adsorption resin (e.g. DIAON HP.20 resin, produced by Mitsubishi Kasei Co.) to obtain the nicotianamine. Since soybean-boiled waste solutions or soybean-immersed waste aqueous solutions by-produced in a process for producing soybean processed foods can be utilized for the production of the nicotianamine, the nicotianamine can be obtained at a greatly low cost. Since the nicotianamine is further has excellent water solubility, the nicotianamine can be added to various beverages and foods, thereby giving healthy foods having antihypertensive actions and having good tastes.
