Abstract:
PURPOSE: To efficiently obtain the title garlic powder free from peculiar unpleasant smell without damaging a taste by immersing garlics in a specific deodorizing solution, drying under reduced pressure and grinding.
CONSTITUTION: Bulbs of garlic are immersed in an aqueous solution of mesoinositol hexaphosphate, put in a drying chamber whose pressure is reduced to 300-60m bar, dried and ground into a coarse granular state to give the aimed garlic powder.
