To efficiently produce an oil and fat compsn. contg. 1,2-satd.-3unsatd. triglycerides in a high concn. by separating a triglyceride mixture from a specific transesterification product and removing a high-melting-point oil and a low-meltingpoint oil from the mixture.
An extremely hardened oil obtd. from an oil and fat of which the main constituting fatty acids are 16-24C fatty acids is mixed with a 16-24C unsatd. fatty acid and/or an unsatd. fatty acid alkyl ester comprising 16-24C fatty acid parts and 1-4C linear alkyl parts. The resultant mixture is subjected to transesterification with lipase having a 1,3-position specificity. From the reaction product is separated a triglyceride mixture, from which a high- meltingpoint oil and a low-melting-point oil are removed by fractionation. Thus is obtd., as a medium-melting-point oil, the objective compsn. contg. 1,2-satd.-3- unsatd. triglycerides.
