Abstract:
PROBLEM TO BE SOLVED: To provide vegetable oil for cooking with increased suitability by improving the smell of the vegetable oil when it is heated.
SOLUTION: A lipid-hydrolyzing enzyme is added to vegetable oil in the form of powder and dispersed therein at 81-130°C to prepare vegetable oil of reduced smell with heat. In this treatment, the lipid-hydrolyzing enzyme used is the lipase originating from Alcaligenes or Candida and the value in the heating test is controlled to ≥1.2.
