Abstract:

PURPOSE: To produce an oil-in-water emulsion and to obtain such an emulsion as shows the closest analogy with natural milk when the emulsion is used to produce milk product analogs by using standardized raw materials as many as possible.
CONSTITUTION: In the production of an oil emulsion, oil or fat is emulsified in a water-base phase. The water-base phase to be used contains 0.1 to 3 wt.% whey protein which is almost not modified, and the calcium content is 0.2 to 3 wt.% of the whey protein present in the water phase. The total amt. of inorg. materials in the water phase is ≤15 wt.% of the whey protein.
