Abstract:
PROBLEM TO BE SOLVED: To provide a method for producing packed bivalves, which allows virtually all of the bivalves to be opened when taken out of the package and heated, reduces frequency of damages of the plastic bags, which may lead to serious problems, e.g. decay of the content, and reduces quality deterioration when they are preserved for extended periods.
SOLUTION: This method for producing packed bivalves seals raw bivalves and 5 to 12 wt.%, based on the bivalves, of water in a flexible bag under a vacuum, and then thermally sterilizes them under pressure.
