Abstract:

PURPOSE: To obtain the titled food having excellent safety and water resistance and useful as an excellent palatability-modifier, by mixing fish, shellfish or animal meat with conditioned cheese to form a homogeneous pasty mixture and optionally forming or heat-treating the mixture.

CONSTITUTION: 100pts. of fish or shellfish meat (e.g. ground meat of walleye pollack) or animal meat (e.g. red meat of pork) is slowly added with <100pts. of conditioned cheese produced by the heat-treatment of pH-modification of natural cheese or process cheese and, if necessary, with water, seanoning and food additive while treating the meat with a cutter. The product is optionally formed and then heat-treated to obtain the titled food.
