PURPOSE: To produce a tatty for OKONOMIYAKI (Japanese-style pancake) capable of freezing and storing and having constant quality in good efficiency, by using an alcohol in addition to raw materials of ordinary OKONOMIYAKI patty and producing the patty for OKONOMIYAKI in systematic combination with steaming and smoking machine, kneader, rolling mill and punching machine.
CONSTITUTION: A small amount of salt, seasoning, etc., is added to main raw material consisting of wheat flour, water and egg and the resultant mixture is thrown into a steaming and smoking machine 1 and subjected to steam and smoke treatment while feeding steam from a boiler. Then after passing for required time, alcohol is added and further the mixture is subjected to steaming and smoking treatment to prepare the dough of patty for the OKONOMIYAKI (Japanese-style pancake). The resultant dough is introduced to a kneader 8 and kneaded and the kneaded dough is fed to a mill rolling machine 10 and rolled into a flat sheet while taking out the wrinkles with air. Then a starch is sprayed to the rolled dough by starch spraying machines 16 and 18 and uniformed with brushes 17 and 19 and punched to the prescribed shape by a punching machine 20 and housed every plural sheets to provide the patty for OKONOMIYAKI.
