PURPOSE: To prevent the generation of caking in the storage of the titled composition in powdery form and to prevent the formation of gel during the period to pour a jelly-preparation liquid into a mold in the preparation of a jelly cake, by adding a fumaric acid salt to pectin.
CONSTITUTION: The objective pectin composition is a jelly-preparation composition containing pectin and a fumaric acid salt. It may be further added with fumaric acid and/or a sugar. A pectin jelly can be prepared by dissolving the above composition in water (at an amount to give the final product having a pectin content of about 0.3W3wt%), adding a sugar to the solution, heating the mixture, adjusting to about 2.7W3.8pH and forming the mixture. The fumaric acid salt is preferably sodium fumarate from the viewpoint of the storage stability of powdery preparation and the setting time of gel.
