Abstract:
To provide an industrial method for producing a high-purity phosphatide in a high yield.
A phosphatide reacts with a primary or a secondary alcohol in the presence of a phospholipase D collected from a Streptoverticillium hachijoense ATCC 19769 strain and having a phosphatidyl group transfer activity in a simple aqueous phase.
