Abstract:

PURPOSE: To produce a pie dough capable of providing a voluminous product without requirement of an aging process by adding water to raw materials and kneading the resultant mixture under a reduced pressure.
CONSTITUTION: An objective pie dough is continuously produced by adding water to raw materials composed of wheat flour, table salt, fats and oils, saccharide, egg, dairy product, etc., and kneading the resultant mixture under a reduced pressure.
