PURPOSE: To produce the subject dough excellent in palatability, softness and taste by cutting half-crushed glutinous rice into a thin disk shape and heat treating it.
CONSTITUTION: Glutinous rice is water-washed and immersed in water and the resultant water-containing glutinous rice is steamed or boiled to impregnate the glutinous rice with a relatively small amount of saline water or sugared water. After reducing some water contained in the obtained glutinous rice containing saline water or sugared water, the glutinous rice is half-crushed or kneaded and subsequently rolled into thin dough. The resultant thin dough is cut into a specified shape such as a disk and then heat-treated at a relatively low temperatures till the surface layer dries, thus obtaining the objective dough. In addition, a pizza dish is cooked by putting ingredients such as pizza source, cheese and vegetables on the above-mentioned dough and baking it.
