Abstract:

PURPOSE: To obtain a processed egg remarkably reduced in antigenicity of egg protein by subjecting egg to succinic acid treatment under an alkaline conditional and then to alkali treatment.

CONSTITUTION: Egg is dissolved in 0.1 M aqueous solution of sodium pyrophosphate to keep the egg under alkaline condition and subjected to succinic acid treatment by gradually adding succinic anhydride. Then, an alkaline preparation such as sodium hydroxide is added to the succinic acid-treated egg solution and the egg solution is heated to provide the objective processed egg enabling ingestion by allergic patients.
