Abstract:

PURPOSE: To obtain the title hygienic processed food having improved qualities and yield by immersing beans or seeds in ozone water and subjecting to various kinds of treatment depending upon the objective processed food.

CONSTITUTION: Beans or seeds as a raw material are immersed in ozone water having preferably 0.2-20ppm concentration for 2-3 days and then subjected to any of various processing treatment depending upon the purpose to give the processed food such as fried beads or sweetened ADZUKI beans.
