Abstract:

PURPOSE: To provide a process for producing a protein gel capable of lowering a production cost.
CONSTITUTION: A protein-containing liquid is heated to sterilize and added with an enzyme after the heated liquid is cooled. Then, the protein-containing liquid and the enzyme are mixed at the temperature after cooling and the mixed liquid is aseptically packed in a food container. Subsequently, it is kept at the room temperature in the packed state in the food container. The protein is denaturated by the enzyme while it is kept at this temperature. Heating is not required for the denaturation of the protein. Accordingly, the energy consumption is little and the production cost can be suppressed at a low level.
