Abstract:

PURPOSE: Soybean oil is heated to a specific temperature under exposure to air or oxygen in the course of production and deodorized, thus producing purified soybean oil which forms less smell even in the presence of light and keeps the oxidative stability unharmed.

CONSTITUTION: In the course of production, soybean oil is heated under exposure to air or oxygen to 150W260°C for 5W240min and subjected to deodorization treatment to give purified soybean oil. The exposure of soybean oil to air or oxygen is effected only by the contact of the surface of soybean oil with air or oxygen, but much effectively by involving air or oxygen in the oil with a stirrer or blowing air into the oil to forcibly increase the contact area. The deodorization is conducted by blowing steam into the oil kept under reduced pressure to evaporate off the odor components in the soybean oil.
