Abstract:
PURPOSE: To obtain a ready-to-eat noodle excellent in preservability and easily boilable with a microwave oven, by noodle-making of a dough prepared by kneading wheat flour with a preservative and water followed by heat sterilization with microwaves.
CONSTITUTION: A dough prepared by kneading (A) wheat flour or its mixture with starch with (B) a preservative and (C) water is subjected to noodle-making process followed by heat sterilization by microwave for 20s to 10min to obtain the objective ready-to-eat noodle which can be boiled together with water by microwave.
