PURPOSE: To produce CHIMAKI colored in natural color of adzuki bean, having boiled glutinous rice swollen in a good finish, by immersing glutinous rice in tepid water mixed with an adzuki bean immersed solution.

CONSTITUTION: Adzuki beans are immersed in water in an amount to bathe the beans under water, the prepared adzuki bean immersed solution is mixed with tepid water in the ratio of about 7:3 and adjusted to about 35W40°C. Then glutinous rice which is previously soaked in water for pretreatment and dehydrated is added to the tepid water in an amount to bathe the glutinous rice under water, aged for about 6hr, dehydrated and packed into bamboo leaves by a conventional procedure to give raw CHIMAKI, which is boiled in hot water. Then boiled CHIMAKI is taken out from the hot water, directly allowed to stand in warm water for about 3W6hr, CHIMAKI naturally cooled in warm water is taken out, hung and dehydrated to give a product.
