Abstract:
PURPOSE: To readily obtain the title cracker uniformly incorporated with fissure, by making a spread dough from a blend of nonglutinous rice with glutinous rice, boiling the dough followed by drying.
CONSTITUTION: Firstly, 0-20wt.% of glutinous rice is blended with nonglutinous rice, and a spread dough is prepared from the resultant blend. Thence, this dough is boiled for several minutes followed by drying to develop fissure on the dough, thus obtaining the objective rice cracker.
