Abstract:

PURPOSE: To permit easy and efficient production of saccharides by allowing α-glucosidase to act on glucose and sugar alcohol.

CONSTITUTION: Starch is saccharified to give glucose (A). Then, sucrose, glucose or the like are reduced to give sugar alcohols such as sorbitol, mannitol, erythritol, xylitol, inositol or the like (B). Then, components A and B are mixed at a weight ratio of from 100:1 to 1:100 so that the total weight of A and B becomes 5 to 100wt.% to prepare the substrate (C). α-Glucosidase (D) originating from Bacillus is added to the substrate C to conduct the reactions at 4 to 10pH and 20 to 70°C to give the reaction mixture (E). The mixture (E) is filtered through a membrane filter and purified by treatment with activated carbon and an ion-exchange resin to give a saccharide compound such as α-D- glucopyranoside-1,6-sorbitol or α-D-glucopyranoside-1,6-mannitol.
