PURPOSE: To produce seasoning containing an alkali potassium chloride by cooling desalted carbonated water for preparing Chinese noodles to a specific temperature to precipitate and to remove calcium sulfate, cooling a supernatant liquid thereof to a specific temperature to precipitate potassium chloride containing salt and separating and air-drying the salt.
CONSTITUTION: Desalted carbonated water for preparing Chinese noodles prepared by concentrating sea water, separating and removing precipitated salt is cooled to 55-42°C, precipitated calcium sulfate is separated and removed. Then the supernatant liquid thereof is cooled to ≤20°C, precipitated potassium chloride-containing salt is separated and air-dried. Consequently, seasoning having a salty taste and good flavor even with somewhat bitterness is obtained.
