Abstract:

PROBLEM TO BE SOLVED: To provide a method for producing a sausage pickled in sake lees without curing, having a taste suitable to the Japanese foods, and also capable of preserving for a long period of time without a contamination by spore forming bacteria.
SOLUTION: This method for producing a sausage pickled in sake lees without curing, comprises finely cutting a raw material meat, mixing with cutting the raw materials, filling the mixture into a casing pickling the mixture in a filled state in the casing into the sake lees, then preserving the sausage after the pickling through processes of drying, steaming, cooling with running water, packing, sterilizing and cooling.
