Abstract:

PURPOSE: To obtain the solid brewed vinegar not having an irritative smell, having a good flavor, and useful as a raw material for producing healthy foods by mixing a brewed vinegar with swollen grains, swollen starch, etc., for the absorption of the brewed vinegar under stirring, and subsequently drying and grading the vinegar-adsorbed grains, the vinegar-adsorbed starch, etc.
CONSTITUTION: 1 pt.vol. of brewed vinegar 1 is mixed with 0.2-4 pts.wt. of swollen grains (e.g. swollen rice, swollen soybean), swollen starch (e.g. swollen potato starch) or their ground product under stirring, and the vinegar-absorbed grains, the vinegar-adsorbed starch, etc., are subsequently dried with hot air preferably at 50-80°C for 5-20hr to obtain the objective solid brewed vinegar.
