Abstract:

PURPOSE: To produce a simply handleable solid cow's milk capable of sustaining nutritive value as cow's milk, by heating raw milk, evaporating water until the milk becomes a clayey state, stopping heating, then releasing the moisture by remaining heat and drying the resultant milk in a refrigerator.

CONSTITUTION: A given amount of raw milk is boiled on a strong fire for a required time while stirring to evaporate water. When viscosity is increased, the fire is reduced to a middle fire to continue stirring and evaporate water. When the milk becomes clayey, the heat source is put out and the clayey cow's milk is allowed to stand in a state of releasing the moisture by remaining heat therein for several min. Furthermore, the resultant milk is placed in a separate container and dried in a refrigerator at about ≤10°C for about a whole day and night to provide the aimed solid cow's milk.
